Appetizer- Lobster and goat cheese hush puppy with hollandaise sauce, blood orange gastric, and candied jalapeño paired with Pierre Delize Blanc de Blancs Brut Vin Mousseux, Burgundy, France
Salad- Signature house mixed greens, goat cheese ball, candied cayenne walnuts, roasted pumpkin seeds with smoked blueberry Cognac vinaigrette paired with Mauro Molino Dolcetto D’Alba, Piedmont, Italy
Entree- Papa de salmon envuelto – potato wrapped Northern Atlantic salmon, leek hay with tarragon lemon truffle pan sauce paired with Jovino Pinot Noir, Willamette Valley, Oregon
