TOON DIP
Double Dry Hopped Double IPA

Mark Bjornstad
Co-Founder & President

Drekker Brewing Co. (Fargo, ND)

Dip hopping is a Japanese technique first pioneered by Kirin Brewery of Japan. It involves adding hops after the wort has cooled before fermentation starts. Using this method, hop enzymes don’t contribute to the main fermentation, and myrcene levels remain very low in the finished brew (which many find favorable). 2M3MB, an onion flavor derived from iso-alpha acid, is also suppressed, thanks to lower H2S content in the beer. Drekker Brewing and Fair State Brewing Co-op used this method while brewing Toon Dip, to very drinkable results.

Pouring a beautiful golden color with a frothy white head, the haze factor in this brew is clear the second it enters the glass.

The aroma is big and fruity, with candied fruit, ripe melon, a touch of mango and other tropical notes coming to the fore. It’s a wonderful melange and may even distract you from taking a sip.

Big juicy fruit flavors are found upfront with notes of tropical fruit such as mango and overripe pineapple taking center stage. The body is super smooth, thanks to oats and spelt in the malt bill. The Mosaic, Citra and El Dorado really shine, imparting tons of fruity flavor, without even a hint of bitterness. It’s an easy-drinker, belying the 8 percent ABV.

ZANGO

Fruited Ale

Chris Shields
Director of Education

Rhinegeist Brewery (Cincinnati, OH)

When apple, mango and tangerine merge only one word comes to mind: Zango! This delightfully refreshing concoction is enchantingly crisp, alluringly tart and sparkling with notes of citrus and tropical fruit. Zango dazzles palates with Rhinegeist’s liquid legerdemain.

When the brewers sat down to brainstorm on a follow-up to Slangria, we wanted a beer that fit the season. Citrus fruit is in-season right now, so tangerine was an excellent starting point for this brew. The beer’s apple backbone brings a sweet, floral note and some additional acidity with a touch of tannin to keep you coming back. Rhinegeist also wanted to look ahead toward summer (and the return of Wowie), so they brought in mango as a tropical complement. Mango adds just enough equatorial flair to make you think about summer, without feeling bummed that it’s not here yet. Once the brewery nailed down the component fruits, it was all about finding the balance of tropical, pomme and citrus elements that hit just the right note for a springtime session beer.

Show Overview & Format

The Beer Connoisseur, in partnership with Tavour, promotes up to five highly rated and sought-after beers each week that are available for purchase on the Tavour app.

The Beer Connoisseurencourages its Beer Buyers Club members to purchase these beers via the app and then bring the beers to BC’s Livestream Happy Hour the following Friday.

BJCP-certified beer & mead judge and certified Cicerone® Doug Piper moderates the happy hour, in which the featured breweries and beers are discussed along with guided tastings from the brewers.

This unique event allows BC’s beer club members to taste and discuss these hard-to-find beers with fellow beer connoisseurs and engage in an in-depth Q&A with the brewers themselves.

The audio of the livestream event is then converted into a podcast so that beer club members that could not attend the livestream, along with BC’s general audience, may enjoy the discussion and insights shared among the brewers and attendees.
