An Easy Appetizer From Chef Lee Anne House

Everyone needs a few recipes up their sleeves for the holidays. Whether you are cooking for a small intimate gathering or a large party, having appetizers you can make ahead of time is key to enjoying your event.

I love everything about this appetizer. From the crunch of the endive, the creaminess of the cheese, the tang from the vinegar and the decadence of prosciutto…it is the perfect app for my parties.
These can be made many hours ahead of time and stored in the fridge on a small sheet tray. Line them up close so they can’t fall over. Wait to garnish them till you serve.
This recipe makes about 15-20 stuffed endive leaves.

Salsa Verde Stuffed Endive with Bleu Cheese, Pears and Prosciutto

1/2 cup softened, low fat cream cheese

1/2 cup low fat sour cream

1/8 cup low fat, olive oil mayo

2 teaspoons HouseMade Salsa Verde seasoning

1/3 cup crumbled bleu cheese plus more for garnish

2 scallions chopped thin

1 small red pear, small diced with skin on

1/2 cup small died prosciutto plus more for garnish

1 teaspoon Spicy Olive Cranberry Pear Vinegar

2 heads of Belgium endive

1/8 cup chopped fresh parsley

Whip together the cream cheese, sour cream, mayo and salsa verde seasoning. Fold in gently the bleu cheese, scallions, pear, prosciutto and vinegar.

Cut the stem end off the endive so you can pull off individual leaves. You will have to cut the end of multiple times till you get to the center.

Fill the endive leaves with the cream cheese mixture. Garnish with more bleu cheese, prosciutto and fresh parsley.

Chef House’s Herby Greek Yogurt Feta Dressing

Chef House here, sharing what’s become my go to summer sauce. It is great with fresh tomatoes, as a salad dressing or as a dip for grilled chicken skewers, asparagus and flatbread.
Here I drizzled it on  a salad with avocado, tomatoes, cucumber, spinach and chicken chorizo.
The next  photo is chorizo (my seasoning) spiced chicken skewers with grilled asparagus and flatbread. I will be making this dish on Living Dayton next Friday.

 

Herby Greek Yogurt Feta Dressing

 

1 1/2 cups non fat greek yogurt

1/2 cup low-fat olive oil mayo

1/2 cup water

1 tablespoon lemon juice

I small garlic clove, smashed

2 teaspoons granulated dried onion

1/4 cup each chopped fresh mint and dill

1/3 cup chopped fresh Italian parsley

1/2 cup feta

 

Puree all ingredients in a food processor till smooth.

Housemade Introduces Peachy Sriracha!

Due to a problem sourcing peppers the original sauce has been off the shelves most of the summer. But now HouseMade Sriracha is back up and running with their newest flavor, Peachy Sriracha. Super ripe peaches combined with Cincinnati grown habaneros makes for a fun sweet and spicy sauce. This is a small batch made at the end of the peach season. When it’s gone it’s gone till next year. Get it while you can!

 

Owner Lee Anne House  tells us to watch out for a green sriracha to come up next. This is made with a blend of serrano peppers, tomatillos and pineapple juice. Like the Peachy, it made its debut on the Bad Dog Nice Taco cart this summer. It was so well received it’s now on their Kaboom tacos and in the pimento macaroni salad, both of which are on the delivery service available Monday-Friday.12112389_1916222168602094_5300581263957082737_n

Filipino & Thai Food From Newest Food Truck

FB_IMG_1436309475110Meet the next hot food truck, Asian Persuasion. They are having their debut night this Friday at the Night Market on July 10th at the Yellow Cab.

Just as the Urban dictionary defines the term Asian persuasion, these guys are full of swagger and confidence. They are stoked to introduce their creative blend of Filipino and Thai food.FB_IMG_1436309597396

The owners Jason and Scott have been friends for over 20 years and have been working on this food truck concept for nearly a year. Jason told us “The best part about starting this truck is I get to cook food passed down from generations of Filipino and Thai families. Every Filipino dish I cook was taught to me by my mother. Every Thai dish I learned from Scott and Inpanh who learned from their mothers. I look at this as an opportunity to share a little of our heritage with people and feed them the same things I feed my family at home. The food truck is just the beginning.”
FB_IMG_1436309470705You can expect to see the Filipino favorite Lechon this weekend. This is spit roasted pork that can be done boneless but still with the crispy skin everyone loves.

Food Adventures will also be at the Night Market. Come help them raise money for Homefull. You can buy a water balloon for $1 to throw at The Big Ragu, aka Steve Milano! Let’s hope it is hot outside!! Homefull is our local homeless advocacy group. They help find housing for individuals and families, learn life skills and job skills and even run a small farm with 150 raised beds. All proceeds will go to them.

This will also be the soft opening for Bad Dog. This is Dayton’s newest hot dog cart. Local grass fed beef from the Keener farm make up the dogs, buns from Ashley’s Pastry Shop in Oakwood and plenty of veggie toppings and sauces made by chef LeeAnne House. These are truly gourmet dogs!

The Night Market,  made up of farmers and locally made food, is held at the Old Yellow Cab building at 700 east Fourth Street. The market runs from 5-10pm,  under a large 60×40 foot tent. The rain won’t scare anyone away this weekend! There will be local beers available, live music and tons of local vendors for all kinds of shopping.

Float the Creek With Mudlick Tap House

11209620_811120032305460_8078715619212801872_nEvery other Monday kayak enthusiasts and beer lovers unite on Twin Creek in Germantown. This laid back affair is put together by Twin Creek Kayak and Canoe Livery & Mudlick Tap House. Float down the scenic twin creek, stop for the rope swings, meet some new people as they paddle by and work up an appetite.

 

Meet up at the launch location ( Kercher Park on Astoria Road) and be ready to go by 6:00pm. The float last about 90 minutes. No prior paddling experience is needed. There are kayaks for rent for $15 (which includes bringing you back to the start point after the float) or bring your own kayak or canoe and float for free!  Mark Ketzel, owner of Twin Creek Kayak and Canoe Livery says, “this partnership is great, we sold out the last float and I think we even had a record number of people out on Twin Creek.”

After the trip everyone is invited back to Mudlick Tap House for food and drinks on the patio. You can look forward to fun cocktails, awesome craft beers or a selection of sun teas.
